Since my recent detox, I regularly have those 'are you there moriarti' moments... and I know the old me, full fat cream, lashings of butter, no shortage of sugar, is not far away but I'm also enjoying experimenting with more of this paleo style food, and making things from scratch. So here's my attempt at Paleo Chocolate
Paleo Chocolate a few months ago would have had me like 'talk to the hand'. But now that I've gone through the challenge of 28 days of detox with Healthy Balance Kenya, I'm kinda like 'well what's paleo all about anyway?'. So what I understand about Paleo is that it's a way of eating that takes you back to caveman times, and encourages a simpler, more natural way of eating. Since I'm an O- blood type (one of the originals) apparently this suits me really well. So couple paleo + a love of chocolate that is completely undiminished even after abstaining for a month, and this recipe comes up trumps. Plus it's super filling because of the coconut oil, so it means you'll eat less of it!
Melt the coconut oil, add the rest of the ingredients and whisk until smooth. At this stage, you could add toasted chopped nuts or dried cranberries. Pour into moulds, and refrigerate for at least 4 hours or until hard. Keep refrigerated and eat in moderation sans guilt!
